Eat & Create

How nice that you have chosen the Eat & Create set. To help you get started, here are two recipe ideas that you can use to test your set straight away. For inspiration, @bujotrulla has prepared bullet journaling pages for you. And now have fun cooking and being creative!


Energy Balls

Ingredients:

  • 100 g oats
  • 120 g peanut butter (or another nut butter)
  • 80 ml honey or maple syrup
  • 50 g linseed flour
  • 80 g mini chocolate drops (optional)
  • 5 ml vanilla extract (1 tsp)

Preparation:

  1. Mix all the ingredients well in a large bowl.
  2. Form small balls with your hands, about the size of a table tennis ball.
  3. Place the balls on baking paper and place in the fridge for at least 30 minutes to firm up.
  4. Pack the energy balls in your lunchbox. The energy balls will keep refrigerated in the box for approx. 1-2 weeks

Quinoa Salad

Ingredients:

  • 170 g quinoa
  • 480 ml water
  • 1 small cucumber, diced (approx. 150 g)
  • 1 pepper, diced (approx. 150 g)
  • 1 small carrot, grated (approx. 60 g)
  • 100 g cherry tomatoes, halved
  • 15 g chopped fresh parsley
  • 50 g chopped feta cheese (optional)
  • 60 ml olive oil
  • Juice of one lemon (approx. 30 ml)
  • Salt and pepper to taste

Preparation:

  1. Rinse the quinoa under running water. Place in a pan with 480 ml water and bring to the boil. Reduce the heat and simmer for 15 minutes until the water has been absorbed. Remove from the heat and leave to cool.
  2. In a large bowl, mix the cooled quinoa with the cucumber, pepper, carrot, cherry tomatoes, parsley and feta cheese.
  3. Add the olive oil and lemon juice, season with salt and pepper and mix well.
  4. Enjoy the salad or take it with you in your lunchbox for the next days lunch break.
